Guinness Tinnymisu: A tiramisu made with Guinness from a tin. Because tiramisu is my favourite dessert and alcohol from a tin is my favourite dinner…


(Serves 6-8)

4 tsps instant coffee
250ml boiling water
100g lady fingers
150ml Guinness
250g mascarpone
4 tbsps icing sugar
300ml double cream
Half tsp cocoa powder

How to:

1. Dissolve the coffee granules in the boiling water and leave to cool.

2. Mix the icing sugar in with the mascarpone. Separately, beat the double cream with an electric whisk until peaks form. Fold this into the mascarpone and icing sugar.

3. Add the Guinness to the coffee mixture and stir. Soak the lady fingers in this liquid until they are damp and not yet falling apart. This shouldn’t take long. Remove from the liquid.

4. Assemble, soaked lady fingers first, then cream.

5. Top with cocoa powder using a sieve.
